Vada sambhar Recipe

Ingredients

4 cups chana dal
1 cup udad dal
200 gram cabbage 
3 onions 
2 tea spoon ginger-chili paste
Oil
Salt to taste

Method

Marinate both the dals disjointedly for 8-9 hours.

After that crush them into a fine paste.

Append all the vegetables and other ingredients.

Stay the batter solid.

Make vadas like medu vadas similar to medu vada or make them in the vada maker.

Dish up hot with sambhar, coconut chatney and coriander chutney.

Pattice Recipe

Ingredients

250 grams potatoes
200 grams peas
2 tea spoons chilli paste
Coriander leaves chopped finely
2 tea spoons ginger paste
1 tea spoon garam masala
1 tea spoon citric acid
1 tea spoon sugar
Rice flour
Oil or Butter
Salt to taste 

Patties recipe is like aloo tikki chaat and rice flakes tikki recipeanywhere curried peas is spooned over pattice, with sweet and green chutney and sev.

Method

Boil, peel and grate potatoes.

After peeled properly add all ingredients except rice flour. Shape like pattice. Roll in rice flour. 

Fry the pattice.

If you are going to serve pattice with ragada.

Then roast on a griddle till brown on both side by adding oil or butter.

Spinach Chana Dal Tikki Recipe


Ingredients for Spinach Chana Dal Tikki

1 cup chana dal
200 gram spinach
5 to 7 green chillies
A small piece of ginger
8 to 10 cloves garlic
Oil
Salt to taste

Method for How to Cook Spinach Chana Dal Tikki

First Soak chana dal for 4 hours.

After grind it properly.

Chop spinch finely, wash and to chana dal.

Following mix all other ingredients.

Shape like tikkiya.

Lastly fry them. 

To make dahiwadas add curd over and then after garnished it.

Ingredients for Sev Puri Recipe 

Panipuri
Curds
Sweet chutney
Sev (fine)
Mung or chana (boiled)
Red chilli powder
Coriander leaves
Boiled potatoes
Chat masala
Salt to taste

Method for How to Cook Sev Puri Recipe

First arrange the puris in a dish.

Add curds, sweet chutney, sev, mung, salt, red chilli powder and potatoes small pieces and square.

Lastly add chat masala.

250 grams rice flakes
2 tea spoons green chillies
4 table spoons finely chopped coriander leaves
Lime juice
2 table spoons sugar
1 tea spoon garam masala
Salt to tast

Method

First soak rice flakes for 2-3 minutes.

After that strain it to remove all excess water.

Then after add all masalas.

Plain Basundi Recipe


Ingredients

1 litre milk
100 grams sugar
A few almonds and pistas (chopped)
A few cardamom seeds
A little nutmeg powder
A few strands of kesar (dissolved in milk)

Basundi is in Gujarati Meetha Pakwan or can say Sweet Dish, found mix taste as geographical coordinates of North Indian Food and East IndianFood.

Method

Pertain a little ghee on the insides of the vessel for making basundi.

Boil the milk on deliberate fire with constant stirring to avoid scorching of milk.

Boil till it thickens.

Then put in sugar.

Cook till the sugar melts completely.

Take away it from the fire.

Add the enduring ingredients. Serve chilled.

Fruit Bhel Chaat Recipe


Ingredients

1 apple
1 chikoo
2 oranges
2 sweet limes
50 grams strawberries
50 grams grapes 
2 cup sprouted mung
1 cup groundnut
1 and half tomato
1 cup rice puffs
½ cup dates chutney
Coriander chutney
Juice of ½ lime water
50 grams sev
25 grams bundi
½ cup grated  carrots
Chopped coriander leaves
Chaat masala
Salt to taste

Method

Peel and cut all fruits and tomatoes into small pieces all most in same size.

Boil groundnuts. Strain all the water. Cut tomatoes into small pieces.

Mix all the ingredients. Decorate with chopped coriander leaves.

And Fruit Bhel is ready to serve which is famous as chaat food among Indian Food.

Grated Raw Papaya Salad Recipe

Ingredients

400 grams raw papaya
1 Lime
2 table spoon oil
½ tea spoon mustard seeds
3 to 4 green chilies (cut length wise)
A pinch asafetida
Salt to taste 

Grated Raw Papaya is salads it has a crunchy test this who loves Indian food and also becomes very useful for those who are on diet and want to eat delicious salad and papaya is a rich resource of antioxidants that the body needs to fight aligned with cancer-causing cells. Vitamin C, E and beta-carotenes are antioxidants that avoid all kinds of cancers. So adding up a daily serving of papaya to your diet may lessen your risk of rising cancer.

Method

Peel and grate raw papaya. Apply salt and keep aside for a few minutes.

Press lightly to remove the excess water from it. Add additional salt (if necessary)
And lime juice.

Heat a little oil. Add mustard seeds, asafetida and green chilies add the seasoning to the papaya. Mix well

Vegetable Rawa Idli Recipe


Ingredients

1 cup rawa

1 cup sour curds
1 tea spoon fruit salt
¼ cup cabbage
½ carrot
2 table spoons finely chpped coriander
Salt to taste

Vegetables rawa idli becomes great breakfast and easy to cook and specially for those who love southIndian food

Method

Roast the rawa on the griddle. Mix curds and fruit salt to the rawa. Add enough water and salt to the better.

Keep it aside for half an hour for soft vegetables rawa idli. 

Mix all vegetables to the idli better stream the idli until they are soft. 

For more delicious Indian food test serve them with chutney and hot Sāmbhar. 

If you don’t want to add vegetables, than rawa idli is also made by this method.

Masala Dosa Recipe


Ingredients
3 and half cup rice
1 and half cup urad dal
100 grams green peas
1 kg potatoes (boiled)
500 grams onions (cut lengthwise)
Oil
1 tea spoon mustard seeds
10 to 12 green chillies (chopped finely)
A few curry leaves
1 and half tea spoons turmeric powder
2 lime
2 tea spoon sugar
1 tea spoon garam masala
A few coriander leaves
Half tea spoon cumin seeds
Salt to taste

Method

Wash and soak rice and urad dal in water overnight.

Next morning, grind them to a fine paste. Mix well, add salt and keep aside. (In summer do not add salt. Make the dosas in the evening.) Soak the dry green peas in the morning. Cut the potatoes length wise.

Heat enough oil in a vessel. Add cumin seeds, green chillies, curry leaves, turmeric powder and onions. Sauté for few minutes. Add green peas and potatoes.

While frying onions add little salt that is just enough for onions. Then add the additional salt, sugar and lime juice. Sprinkle finely chopped coriander.

Heat a griddle or a non – stick fry pan. Grind the flour into a fine powder. Add salt and cumin seeds to the dosa batter.

Spread a little oil or ghee all over it. Then spread the batter with a serving spoon or a katori.

Pour a little oil or ghee all round the dosa. Mix half tea spoon oil and water in a katori.

After making each dosa, dip a cloth in this oil and water mixture. Wipe the griddle with the cloth. Fill the masala (potatoes and peas) in the centre.

Serve hot and crispy dosa with chutney and sandbar.

Masala Dosa Recipe, Cooking Tips : you can soak the dal and rice early in the morning, grind it in the afternoon and make the dosas at night for dinner.

Dosa Roll Recipe, Cooking Tips: make rolls of the masala. Dip them in the dosa batter and fry them till golden brown in colour.

Explanation Of Important Cookery Terms

Baking: cooking food in the hot dry air of oven. The temperature is controlled to obtain correct cooking results. Food like bread, cakes, pastries, puddings, biscuits and so on, is cooked in an oven. Blending: mixing two or more ingredients thoroughly.

Brushing: applying a thin, even coating of milk or ghee to pies, buns, and so on, just before they are placed in the oven. This is done to make them look glossy and to brown them more quickly and deeply. Special pastry brushes are available in the market.

Sauteing: Tossing food in shallow fat and browning.

Shredding: cutting food into long thin strips with a knife or a shredder.

Simmering: allowing food to cook gently below boiling point.

Whipping/Whisking: beating cream or any other liquid until it is frothy.

A selective Glossary of Terms

Icing sugar: sugar which sets easily.

Brown sugar: when sugar is heated it becomes brown. Instead of brown sugar one can also use half the amount of plain sugar and the other half amount of jiggery powder. Only plain sugar may also be used.

Drinking chocolate: chocolate powder.

Bread crumbs: tinu bits of bread; powdered toast.

Capsicum: big round chilli.

Canapé: they are small baskets made from Maida. They are fried before using them.

Vermicelli : It is made from ‘mainda’ and is long and thin like ‘sev’.

Noodles : It iis made from ‘mainda’ we have to varieties of noodles – egg noodles and veg. Noodles.

Ajinomoto : It is crystalline. It is mainly used in Chinese recipes. It helps the vegetables to cook faster and retain their test.

Chilli Sauce : It is made from chillies. It is available into colours, green and red. It is mostly used in Chinese recipes.

Soya Sauce : It is made from soya beans. It is dark brown in colour. It is mostly used in Chinese recipes.

Vinegars : It is also known as ‘Saraka’. It is available in two colours i.e., white and brown. It is also as a preservative. It is sour in taste. It is mostly used in Chinese recipes.

Yeast : It is used in preparation of items such as breads , pizzas, nans etc. We have to varieties of yeast, namely dry yeast and fresh yeast.

Silver foil : It is also known as ‘Silver Varakha’. It is very very delicate, paper thin like that used with butter paper. It is used for decorating sweets and deserts and is spread on them along with the butter-paper. Then the butter-paper has to be carefully removed.

Gelatine :  IT is used for preparing puddings, salads, ice-creams, etc. It is used for settings these delicacies. One sachet is equal to  1 table spoon.

Jelly : It is mixture of gelatine, sugar various colours and essence.

Custard powder : IT is used as a thickening agent in milk. It is used in item such as pudding, ice-creams, fruits-salad, etc. It is available in various flavours.

Corn flour : It is coloured fine flour of corn. It is used as thickening agent  in soups, ice-creams and curries. It is also mixed with mainda while making samosa and kachori to make them crispier. It is also used while preparing pattices to make them delicious and crispy.

Sodium Benzoate : It is a kind of preservative. It is used in pickles and others items made from tomato. It is also used in various squashes and juices. For 1 kilo of food item, 1 grams of sodium benzoate is used. Too much used of the preservative should be avoided because it darkens the product.

Potassium-meta-bi-sulphate: it is also called K.M.S.  in short form. It is basically used in ‘sharbats’ and tomato ketchup.

Acetic acid: it is mostly used in products such as tomato ketchup, carrot pickle, sweet and sour chutney, etc.

Citric acid: it is also called ‘Limbu Na phool’. It is used instead of lime juice. Being in powder from it is used in items where lime juice cannot be used as it would moisten the item. It is used as it would moisten the item. It is used in dishes made from apple, mango, grapes, guava, etc. It can also be used in jams and jellies.

Baking powder: it is a mixture of corn flour, soda-bi-card and cream of tartar. It is used as a raising agent in cakes and biscuits.

Glazed Cherries: it is prepared form cherries or karmanda. They are soaked in red sugar syrup and r then dried. They are used for decoration in cakes, biscuits, etc.

Tutsi –fruit : small pieces of raw papaya are soaked in colour sugar syrup , and then dried. They are used for decoration in cakes and biscuits.

Blackjeeri: take 1 teaspoon of jeera, and 10  pepper corns. Roast jeera and then grind jeera  and pepper to a find powder. This power  is used for dahiwada.

Lai: it can be made from Maida or rice flour. Mix flour and water. Heat the mixture uptil it is thick. This can be used for pasting samosa covers puffs, etc.

Aluminium Foil: it is used to wrap lollipops. When the foils are tightly fitted over  a bowl, The food inside remains hot.

Eno’s fruit salt: it is mixture of soda-bi-carb and citric acid. It is used in various dishes to make it soft and fluffy.

China grass: it helps the ice cream to set faster.

G.M.S. and C.M.S.: these powders are used for making ice creams. They help to make the ice cream soft and prevent ice formation.

 Gulab Jamun Recipe

Ingredients                                                   
                    
Carnation milk powder-1 cup              
Bisquick pancake mix-1/2 cup
Flour-1/2 cup
Baking soda-1/2 teaspoon
Melted butter-2 tablespoons
Whole milk-enough for dough
Sugar-2 cups
Pure distilled rose water-5 teaspoons
Cardamom pods-4-5
Saffron-few strands
Water-1 cup
Oil for frying
Few rose petals

Method

Mix milk powder, flour, pancake mix, butter and baking soda. Add some whole milk and squeeze the combination in to hard dough.

Smash the dough in to 20 equal sized pieces; roll each portion flanked by your palms to make round smooth balls.

Heat oil in a kadhai. Slip in the balls softly from one side of the kadhai. The balls will sink to the underside of the kadhai. Keep rotating the kadhai with the help of a pair of forceps to allow even browning on all sides.

After sometime, you will see the balls rising to the surface. Agitate the balls to ensure burning on all sides. While, agitating be gentle, or else you would break the balls. You must also be careful about frying the balls on a medium flame in order to prevent breaking.

Once the balls are fried, keep them aside.

Then add 2 cups of sugar to 1 cup water. Further add crushed cardamom pods, rose water and saffron. Stir and heat the solution on a medium flame. The sugar will dissolve completely and your sugar syrup will be ready.

 Keep the basin containing syrup hot on stove and adjust the flame to low.
Put the fried gulab jamuns directly in to the warm sugar syrup and let them soak overnight.

The next day your gulab jamuns would be ready for serving.

Serving Instructions Take the gulab jamuns out of warm sugar syrup and serve hot after garnishing with rose petals.
