Patara is a rolled Gujarati snacks called farasan in Gujarati. Patara is a spicy snacks recipe. Patara is made up of colocasia leaves with layered of chana flour and fry with all the ingredients. Gujarati makes patara in all occasions or day to day life too.


Ingredients for Patara Recipe

Colocasia leaves (patara): 250 grams       

Chana flour: 225 grams

Sugar: 5 table spoons

Red chilli powder: 2 tea spoons

Garam masala: 1 tea spoon          

Dhana-jeera powder: 1 tea spoon  

Mustard seeds: 1 tea spoon

Sesame seeds: 1 tea spoon

Coconut (grated): 1 tea spoon

Clove-cinnamon powder: 1 tea spoon

Ginger and green chili paste: 1 tea spoon

Turmeric powder: ¼ tea spoon      

Curd: 1 cup

Jiggery (grated): ¾ Cup

Butter milk: ½ cup   

Lemon: 1

Coriander leaves: a few (chopped)

Khus khus seeds: a few

Asafetida: a pinch

Oil as needed

Salt to taste

Method How to make Patara Recipe

Step-1: Take a colocasia leaves and removes their veins, wash them well.

Step-2: Take chana flour add Ginger and green chili paste, jiggery, turmeric powder, red chilli powder, asafetida, salt, 2 table spoons oil, 3 table spoons sugar. Mix them well and make a thick batter.Make a thick batter.

Step-3: Spread the batter on the leaves and roll them tightly.



Step-4: Steam the rolled sieve for a few minutes without the whistle if pressure cooker is used.

Step-5: After steamed apply little oil on them to keep them soft. Cut them into pieces.

Step-6: Take a pan , add oil, mustard seeds, sesame seeds, better milk, salt, sugar and cinnamon-clove powder. Add patara pieces and fry it.

Step-7: Garnish with coconut (grated), coriander (chopped) and sprinkle some khus khus on them.
