Vada sambhar Recipe

Ingredients

4 cups chana dal
1 cup udad dal
200 gram cabbage 
3 onions 
2 tea spoon ginger-chili paste
Oil
Salt to taste

Method

Marinate both the dals disjointedly for 8-9 hours.

After that crush them into a fine paste.

Append all the vegetables and other ingredients.

Stay the batter solid.

Make vadas like medu vadas similar to medu vada or make them in the vada maker.

Dish up hot with sambhar, coconut chatney and coriander chutney.

Pattice Recipe

Ingredients

250 grams potatoes
200 grams peas
2 tea spoons chilli paste
Coriander leaves chopped finely
2 tea spoons ginger paste
1 tea spoon garam masala
1 tea spoon citric acid
1 tea spoon sugar
Rice flour
Oil or Butter
Salt to taste 

Patties recipe is like aloo tikki chaat and rice flakes tikki recipeanywhere curried peas is spooned over pattice, with sweet and green chutney and sev.

Method

Boil, peel and grate potatoes.

After peeled properly add all ingredients except rice flour. Shape like pattice. Roll in rice flour. 

Fry the pattice.

If you are going to serve pattice with ragada.

Then roast on a griddle till brown on both side by adding oil or butter.

Spinach Chana Dal Tikki Recipe


Ingredients for Spinach Chana Dal Tikki

1 cup chana dal
200 gram spinach
5 to 7 green chillies
A small piece of ginger
8 to 10 cloves garlic
Oil
Salt to taste

First Soak chana dal for 4 hours.

After grind it properly.

Chop spinch finely, wash and to chana dal.

Following mix all other ingredients.

Shape like tikkiya.

Lastly fry them.

Plain Basundi Recipe


Ingredients

1 litre milk
100 grams sugar
A few almonds and pistas (chopped)
A few cardamom seeds
A little nutmeg powder
A few strands of kesar (dissolved in milk)

Method

Pertain a little ghee on the insides of the vessel for making basundi.

Boil the milk on deliberate fire with constant stirring to avoid scorching of milk.

Boil till it thickens.

Add the enduring ingredients. Serve chilled.

Fruit Bhel Chaat Recipe


Ingredients

1 apple
1 chikoo
2 oranges
2 sweet limes
50 grams strawberries
50 grams grapes 
2 cup sprouted mung
1 cup groundnut
1 and half tomato
1 cup rice puffs
½ cup dates chutney
Coriander chutney
Juice of ½ lime water
50 grams sev
25 grams bundi
½ cup grated  carrots
Chopped coriander leaves
Chaat masala
Salt to taste

Method

Peel and cut all fruits and tomatoes into small pieces all most in same size.

Boil groundnuts. Strain all the water. Cut tomatoes into small pieces.

Mix all the ingredients. Decorate with chopped coriander leaves.

Grated Raw Papaya Salad Recipe

Ingredients

400 grams raw papaya
1 Lime
2 table spoon oil
½ tea spoon mustard seeds
3 to 4 green chilies (cut length wise)
A pinch asafetida
Salt to taste 

Grated Raw Papaya is salads it has a crunchy test this who loves Indian food and also becomes very useful for those who are on diet and want to eat delicious salad and papaya is a rich resource of antioxidants that the body needs to fight aligned with cancer-causing cells. Vitamin C, E and beta-carotenes are antioxidants that avoid all kinds of cancers. So adding up a daily serving of papaya to your diet may lessen your risk of rising cancer.

Method

Peel and grate raw papaya. Apply salt and keep aside for a few minutes.

Press lightly to remove the excess water from it. Add additional salt (if necessary)
And lime juice.

Heat a little oil. Add mustard seeds, asafetida and green chilies add the seasoning to the papaya. Mix well

Vegetable Rawa Idli Recipe


Ingredients

1 cup rawa

1 cup sour curds
1 tea spoon fruit salt
¼ cup cabbage
½ carrot
2 table spoons finely chpped coriander
Salt to taste

Vegetables rawa idli becomes great breakfast and easy to cook and specially for those who love southIndian food

Method

Roast the rawa on the griddle. Mix curds and fruit salt to the rawa. Add enough water and salt to the better.

Keep it aside for half an hour for soft vegetables rawa idli. 

Mix all vegetables to the idli better stream the idli until they are soft. 

For more delicious Indian food test serve them with chutney and hot Sāmbhar. 

If you don’t want to add vegetables, than rawa idli is also made by this method.

Masala Dosa Recipe


Ingredients
3 and half cup rice
1 and half cup urad dal
100 grams green peas
1 kg potatoes (boiled)
500 grams onions (cut lengthwise)
Oil
1 tea spoon mustard seeds
10 to 12 green chillies (chopped finely)
A few curry leaves
1 and half tea spoons turmeric powder
2 lime
2 tea spoon sugar
1 tea spoon garam masala
A few coriander leaves
Half tea spoon cumin seeds
Salt to taste

Method

Wash and soak rice and urad dal in water overnight.

Next morning, grind them to a fine paste. Mix well, add salt and keep aside. (In summer do not add salt. Make the dosas in the evening.) Soak the dry green peas in the morning. Cut the potatoes length wise.

Heat enough oil in a vessel. Add cumin seeds, green chillies, curry leaves, turmeric powder and onions. Sauté for few minutes. Add green peas and potatoes.

While frying onions add little salt that is just enough for onions. Then add the additional salt, sugar and lime juice. Sprinkle finely chopped coriander.

Heat a griddle or a non – stick fry pan. Grind the flour into a fine powder. Add salt and cumin seeds to the dosa batter.

Spread a little oil or ghee all over it. Then spread the batter with a serving spoon or a katori.

Pour a little oil or ghee all round the dosa. Mix half tea spoon oil and water in a katori.

After making each dosa, dip a cloth in this oil and water mixture. Wipe the griddle with the cloth. Fill the masala (potatoes and peas) in the centre.

Serve hot and crispy dosa with chutney and sandbar.
